Chicken Pot Pie

As the weather cools down, the idea of a plate of chicken pot pie just sounds right…. So let’s make it!


Rotisserie chicken

1/2 onion

Pack of frozen mixed veggies

Yellow Gold potatoes

Heavy cream

Chicken stock

Olive oil

Fav seasonings (I used onion powder, garlic powder, Tony’s no salt seasoning, salt, pepper paprika, cayenne pepper)

Puff pastry (this is a game changer. Super flaky and delicious)


  1. start out by chopping up 1/2 onion, yellow gold potatoes, and rotisserie chicken

  2. In a hot skillet add olive oil and a little butter and sauté onion for a few minutes. Then add potatoes and let soften

  3. Next, add in your frozen vegetable mix once those cook down, add in chicken

  4. Add in your heavy cream and chicken stock.

  5. season with your favorite seasonings and allow everything to be friends :)

  6. once the potatoes are completely tender, in a oven safe pan, add your filling. Top with a puff pastry. Cook in a 400 degree oven for about 35-45 min. Until golden brown.
